Carbohydrases

Our starch hydrolyzing carbohydrases work on amylose and amylopectin from a variety of grain sources. The principal applications are production of corn syrup, ethanol, baking,and brewing.

Our non-starch carbohydrases are those enzymes which hydrolyze polymers made up of six carbon sugars but do not include amylose and amylopectin degrading enzymes. Examples would be cellulases which will ultimately produce glucose when complete hydrolysis is achieved. Another example is Lactase which hydrolyses lactose to glucose and galactose.

ASPERZYME®
Fungal alpha amylase powder derived from Aspergillus oryzae., standardized at 40,000 SKB/gram

ADJUZYME®
Liquid saccharifying amylase derived from Aspergillus niger for production of fermentable sugars.

ENZECO® BREWERS MYLASE
Carbohydrase from Aspergillus sp. and Rhizopus oryzae used in the manufacture of light beer where inactivation during pasteurization is desired. Available as a powder.

ENZECO® BREWERS FERMEX
Carbohydrase from Aspergillus sp. and Rhizopus oryzae to increase fermentability of wort. Available as a powder.

COOKERZYME®
Bacterial enzyme system derived from Bacillus subtilis for the rapid hydrolysis of starch adjuncts. Available as a powder or liquid.

CO-ADJUZYME®
Concentrated fungal saccharifying enzyme system to be used in conjunction with ADJUZYME® for more efficient production of fermentable sugars. Available as a liquid.

ENZECO® MASH-ZYME
A balanced blend of special enzymes carefully selected for their specific ability to duplicate the activity of the naturally occurring enzymes found in good malts.

ENZECO® GLUCOAMYLASE POWDER RO
Derived from Rhizopus oryzae. High in glucoamylase activity as well as appreciable amounts of endo-amylase and protease activity.

ENZECO® GLUCOAMYLASE POWDER AN
Derived from Aspergillus niger, a very pure glucoamylase with little protease or amylase side activity present. Suitable for use in baking applications to enhance proofing in lean or frozen doughs.

ENZECO® GLUCOAMYLASE-L
A liquid glucoamylase derived from Aspergillus niger.

ENZECO® BACTERIAL ALPHA AMYLASE
Heat stable alpha amylase derived from Bacillus amyloliquifacians, available in powder form.

ENZECO® BACTERIAL AMYLASE-4000
Thermostable alpha amylase available as liquid and powder.

ENZECO® BACTERIAL AMYLASE 2LC
A moderately heat-stable, food grade liquid alpha amylase.

ENZECO® FUNGAL ALPHA AMYLASE
Food grade enzyme system derived from Aspergillus oryzae, available in liquid or powder.

ENZECO® BAKING ENZYME AN
A powder enzyme preparation derived from Aspergillus niger that is used as a fermentation aid for frozen dough products. It can also be used to enhance the fermentation rate of very lean formula dough products.

ENZOBAKE®
A special blend of proteases and amylases from A. oryzae. It is a powder preparation that can be added to the sponge or dough side to improve fermentability and to relax the dough when using strong flours.

FRESH-N®
Uniquely formulated heat resistant alpha amylase powder from amyloliquefaciens, formerly B. subtilis to extend shelf life in baked goods.

ENZECO® INVERTASE
A preparation derived from yeast. The function is to invert sucrose to fructose.

MULTIZYME®II
A blend of A. oryzae and amyloliquefaciens, formerly B. subtilis amylases with some protease activity present. This preparation is designed for use in corn silage and animal feeds. Available as a powder.


Non Starch Hydrolyzing

ENZECO® FUNGAL LACTASE
A powder lactase preparation derived from A. oryzae. This lactase is commonly used in tablet applications. Stable at acid pH’s and high temperatures. The activity is standardized based on the assay in Food Chemicals Codex IV.

ENZECO® LACTASE NL
A liquid preparation derived from yeast. Yeast lactase is the preferred product for milk conversion. It works well at low temperatures

ENZECO® CELLULASE CE-3 (liquid), Derived from T. longibrachiatum (aka T. reesei), this is a food grade cellulase. It is available as a liquid and a powder. It is very high in endo cellulase activity and has substantial activity on cellulose as measured by filter paper activity.

ENZECO® CELLULASE CEP (powder), Derived from T. longibrachiatum (aka T. reesei), this is a food grade cellulase. It is available as a liquid and a powder. It is very high in endo cellulase activity and has substantial activity on cellulose as measured by filter paper activity.

ENZECO® CELLULASE FG
Derived from A. niger, this is a food grade cellulase.

ENZECO® CELLULASE 726
Derived from T. longibrachiatum, high filter paper and xylan degrading activity very useful for industrial processes such as septic systems or biogas.

MULTIZYME® BETAGLUCANASE
Derived from T. longibrachiatum (aka T. reesei), this is a food grade source of beta glucanase for brewing, or to hydrolyze glucans that may reduce processing rates. Available as a powder or liquid.

MULTIZYME® BX+BG
Derived from Trichoderma longibrachiatum (aka T. reesei), this enzyme preparation is a concentrated source of xylanase and beta glucanase. The primary application is animal feeds containing one or more alternate grain sources such as wheat, barley, oats, or rye.

MULTIZYME® BX-AN
Derived from Trichoderma longibrachiatum aka T. reesei, this enzyme preparation is a concentrated source of xylanase and beta glucanase.  The exylanase activity is significatnly higher than that found in the BX+BG.  The primarly application is animal feeds, but may also be used in baking applications, where high xylanase activity is desired.

ENZECO® HEMICELLULASE 20M
Derived from Apergillus niger, this enzyme is high in a variety of galactomannan degrading activities.

ENZECO® XYLANASE AN900
A xylanase derived from T.longibrachiatum. The principal uses are baking and milling, and animal feeds. Lower in mannanase activity than Enzeco® Hemicellulase 20M but higher in cellulase side activity.
