As the name implies, these enzymes break down proteins. The listing is divided by the source of the enzyme, animal, fungal, bacterial. These enzymes have various pH, temperature, and other operating parameters. Please contact EDC for specific recommendations.



Animal Origin

ENZECO® CHYMOTRYPSIN 1:1
Derived from bovine glands with a ratio of 1 trypsin unit: 1 chymotrypsin unit per milligram. The activity is approximately 1000 trypsin units and 1000 chymotrypsin units per mg.


 

Botanical Origin

BROMELAIN: Is a broad spectrum protease derived from pineapple that has a wide operating range of 4 to 9 pH.  Available as a powder at different activity levels.

ENZECO® BROMELAIN 1:10  ENZECO® BROMELAIN 240 ENZECO® BROMELAIN CONCENTRATE   Protease from the fruit of pineapple (Ananas comosus) characterized by its controlled selective hydrolysis over a wide range of conditions.

FICIN:  This specialty protease is extracted from certain varieties of fig trees and has a lower tempertaure of deactivation than bromelain or papain.  Available as a powder at two different activity levels.

ENZECO® FICIN 100, ENZECO® FICIN 260
A protease derived from the latex of fig tree Carica glabrata. It has a lower temperature of inactivation than papain or bromelain and a faster rate of reaction.

PAPAIN:  Is a versatile protease extracted from papaya that has strong themal stability.  Will rapidly hydrolyze a variety of proteins over a wide range of conditions.  Available as powder or liquid.

ENZECO® PURIFIED PAPAIN
Papain powder available over a wide range of activities to pure, unstandardized form.  May be standardized on TU, MCU, FCC PU, or FIP activity.

PANOL® 100, PANOL® 300 (Powder papain standardized at activities of 100 and 300 MCU/mg.)

LIQUIPANOL® T-100, LIQUIPANOL® T-200
Liquid papain standardized at activities of 100 and 200 TU/mg.

ENZECO® PURIFIED PAPAIN RS 600
A reduced sulfite papain produced from latex that has no added sulfites during the collection or processing steps.  Standardized at 600 TU/mg.

ENZECO® DUAL PROTEASE
Combination of bromelain and papain.

ENZECO® TRIPLE PROTEASE
Combination of bromelain and papain and Ficin.

 


Microbial, fungal

Standard type of fungal protease from Aspergillus oryzae that is a microgranulate available at various activity levels from concentrate to blends.  Working range of 3 to 6.5 pH with peak activity at 5.5 pH.

Neutral fungal protease with a working range roughly between 4 and 9 pH and peak activity between 6 and 8 pH for the generation of smaller peptides with some debittering.

ENZECO® FUNGAL ACID PROTEASE
Specialty fungal proteolytic enzyme derived from Aspergillus niger that provides  unique cleavage and smaller peptides.  Most active between 2 and 5 pH, with peak activity between 2.5 to 3.0 pH.  Good stability up to 50 °C.  Available as a powder or liquid.

ENZECO® FUNGAL PROTEASE 180
A fungal protease system from Aspergillus oryzae with low to moderate amylase side activities. Available as a powder.  Standardized at 180,000 HUT/g with significant amylase side activity.

ENZECO® FUNGAL PROTEASE 100
A fungal protease system derived from Aspergillus oryzae with acid and neutral proteases. This system is particularly high in leucine aminopeptidase activity as well as acid GTG-ase activity. Available as a powder.  Standardized at 100,000 HUT/g.

ENZECO® PROTEASE FNP
A highly concentrated fungal protease system derived from Aspergillus oryzae with acid and neutral proteases.  This system is particularly high in leucine aminopeptidase activity as well as acid GTG-ase activity.  Available as a powder or liquid (in tote quantities only).

ENZECO® PECTINASE AO-30
Powder from a different strain of Aspergillus oryzae with unique debittering side activities.

Concentrated powdered enzyme preparation derived from Aspergillus oryzae with balanced protease and alpha amylase activity. It is ideal for baking applications.

Protease blends with amylase and other activities added. The products are designed for the food supplement industry.

ENZECO® NEUTRAL BACTERIAL PROTEASE 160B
Neutral bacterial protease powder derived from Bacillus subtilis var amyloliquifacians, standardized at 160,000  most typically used at a pH range of 5.5 to 7.5.  Peak activity is at 6.5 pH.  Allowed for use in meat tenderizing applications by the USDA starting in 1999. Essentially free of amylase side activity.

ENZECO® NEUTRAL BACTERIAL PROTEASE 500
Neutral bacterial protease powder derived from Bacillus subtilis var amyloliquifacians, standardized at 500,000 PC/g.  Most typically used at pH range of 5.5 to 7.5.  Peak activity is at 6.5 pH.  Allowed for use in meat tenderizing applications by the USDA starting in 1999.  Essentially free of amylase side activity.

ENZECO® NEUTRAL BACTERIAL PROTEASE BA 170
This is a liquid neutral/alkaline protease from Bacillus amyloliquefaciens, kosher with a pH range of 6.0 to 9.5 and an optimum temperature range of 40 – 60 degrees C. Very effective hydrolysis of vegetable proteins such as gluten.  Good for smaller peptide generation.

ENZECO® GLUTAMINASE ADK
A neutral protease derived from Bacillus subtilis, with 100 u/g of glutaminase activity. It works best in combination with another exo protease containing product such as ENZECO® FUNGAL PROTEASE 400. The optimum pH is neutral and the optimum temperature range is 50 – 60°C.

ENZECO® ALKALINE PROTEASE MG
ENZECO® ALKALINE PROTEASE 660-L
Food grade microgranulate and liquid alkaline protease from Bacillus licheniformis with a working range between 7 and 10 pH.  Peak activity occurs at 9.5 pH.  Use on many different types of protein at a high pH.  Note, pH adjustment may not be needed depending on the temperature of the reaction.
