Related Enzymes
These enzymes are used in milk related applications.
These include the production of low/no lactose milk, enzyme
modified cheese, and cheese production.
LACTASES
ENZECO® FUNGAL LACTASE
An acid optimum beta-D-galactoside galactohydrolase derived
from Aspergillus oryzae. The activity of the enzyme
is expressed in FCC Lactase units/gram. pH range between
4.0
and 7.5. Optimum temperature of 55 degrees C at both pH 4.5
and 6.5. Galactose has a strong inhibitory effect on the
activity.
Generally used in dry mixes containing lactose or in lactase
type tablets or capsules.
ENZECO® LACTASE NL
A neutral liquid lactase preparation derived from the dairy
yeast Kluyveromyces that catalyzes the conversion
of lactose to its component sugars (glucose and galactose).
Generally used for the production of no/low lactose milk.
LIPASES
ENZECO® MICROBIAL LIPASE 50,000
A powder microbial lipase derived from a select strain of
Aspergillus niger. Has maximum lipolytic activity
at pH 5.0 to 7.0 when assayed with olive oil and is quite
stable at pH 3.0 to 7.0. Optimum pH 6.5 at 37degrees C.
ENZECO® ESTERASE/LIPASE
A powder fungal enzyme preparation derived from Mucor
miehei. Optimum pH 7.0 - range of 5.0 to 8.0. Optimum
temperature is between 45-50 degrees C. Activity decreases
at temperatures
above 64 degrees C.
ENZECO® LIPASE RO 20
A unique lipase derived from Rhizopus oryzae. The
enzyme produces significant levels of short chain fatty
acids
such as C8. The action on longer chain fatty acids is not
as aggressive as the lipase from A. niger or pancreatic
lipase.
ENZECO® LIPASE CONCENTRATE
Derived from Candida cylindracea, (aka candida
rugosa) it has a broad activity on many different fats.

FUNGAL PROTEASE CONCENTRATE
A variety of fungal enzyme preparations produced from Aspergillus
oryzae and Aspergillus niger. Proteolytic
activity choices spread over a pH range of 3.0 to 10.0.
Optimum temperatures
are usually in the range of 50-60 degrees C. The enzyme preparations
are rapidly inactivated at temperatures above 65 degrees
C. FUNGAL
PROTEASE CONCENTRATE, PROTEASE 400, and PROTEASE 100, contain
varying levels of leucine aminopeptidase and other debittering
peptidases as well as varying levels of neutral and alkaline
proteases.
ENZECO® NEUTRAL BACTERIAL PROTEASE II 2X
This is a neutral protease derived from B. subtilis.
It is a powder with a pH range of 5.5 to 8.0 with optimum
of 7.0. Optimum temperature is 50 degrees C. This version
contains significant amylase side activities and cannot be
kosher
certified.
ENZECO® NEUTRAL BACTERIAL PROTEASE 160K
This is a neutral protease derived from B. subtilis.
It is a powder with a pH range of 5.5 to 8.0 with optimum
of 7.0. Optimum temperature is 50 degrees C. This version
contains no/very low amylase side activity and can be kosher
certified.
ENZECO® NEUTRAL
BACTERIAL PROTEASE BL490
This is a liquid neutral/alkaline protease derived
from B.licheniformis, kosher with a pH range of
6.0 to 9.5 and an optimum temperature range of 40 - 60 degrees
C.
Other Enzymes
ENZECO® LYSOZYME CHLORIDE
Derived from egg white, this preparation lyses the cell
wall of gram positive bacteria. It is used in milk
for cheese production
to prevent "gas formers" and in other products
to inhibit growth of lactobacillus and related bacteria.
Available
as a powder or a liquid.
