Juice and Fruit Processing Enzymes
The enzymes used in this industry are primarily pectinase type enzymes. Some cellulases and related enzymes are used when maceration is required.
PECTINASES

ENZECO® PECTINASE AJ
This product has a high activity of pectinase (polygalacturonase and pectin esterase). Also contains cellulase and hemicellulase. Derived from Aspergillus niger. Available as a liquid. Used for the clarifying of fruit juices (such as apple and grape) and used for wine manufacturing.

ENZECO® PECTINASE PX
This is a special pectolytic enzyme product with high polygalacturonase and low pectin esterase activity for use in reducing viscosity and increasing yields in the treatment of pome fruit. Derived from Aspergillus niger. Available as a liquid.

ENZECO® PECTINASE DV
A broad spectrum pectinase with high levels of arabinase. Available as a liquid.

ENZECO® PECTINASE PL
A pectin lyase with no other side activities present. Useful in the preservation of "cloud" in pulp wash applications or other applications that require controlled viscosity reduction. Available as a liquid.

Cellulases/ Hemicellulases

ENZECO® CELLULASE CE-2, CEP
A cellulase preparation produced using a strain of Trichoderma longibrachiatum (formerly T. reesei) with endo-1,4-beta-D-glucanase, cellobiohydrolase and exo-1,4-beta-D-glucosidase as its principal activities. Also contains other activities such as hemicellulase, -glucanase, protease and amyloglucosidase. For digestion of plant cell wall constituents. Available as liquid or powder.

ENZECO® XYLANASE S
An enzyme preparation produced using a strain of Trichoderma longibrachiatum. High in pentosanase activity it is particularly useful in digesting pentosans in grain products. Also contains betaglucanase activity. Available as powder or liquid.

ENZECO® HEMICELLULASE A enzyme preparation produced using a strain of Aspergillus niger. Also contains other activities such as galacto-mannanase, poly-galacturonase and acid protease. Available as powder.
